Chef Scott Simpson is back

Do you remember the restaurant Fork?  I really liked this place during the short time it was open 2006, and was sad to learn of its closing only a half year later.  Chef Scott Simpson was dealing with health concerns at the time and had to sell the restaurant.

So I was happy to hear last year that he was planning to open a new restaurant in Ballard.  The Seattle Times reported today that Lunchbox Laboratory is ready to open this week.  Lucky Ballardites.

UPDATE:  I hear they’re aiming for opening on Sunday, March 2.
